Lentil Soup

The perfect Sunday soup! This family recipe is one that we just can’t get enough of and not just because it’s insanely delicious. Packed with healthy fiber and plant based protein, lentils bring a nutritional punch to any meal (and also keeps the gut in check). Add a little sausage for that New Orleans flare and this lentil soup is complete!

Ingredients:

1 cup green lentils 

1 hot + 1 mild Italian sausage links (chicken sausage is a great cleaner alternative but flavor will vary!)

1 white onion chopped 

2 bunches of celery chopped

4 cloves of garlic minced

1/2 cup fresh parsley chopped

4-5 dried bay leaves

1/2 tbs cayenne (will vary based on spice preference)

1/2 tsp salt (I usually add more at the end based on taste but how much you use will vary based on sausage so start small and add as needed!)

8 cups of water

Instructions:

  1. In a large pot brown sausage (I cut mine into 1/4 inch slices but cut to your preference)

  2. Next add onion, celery, and garlic to pot and sauté for another 2-5 minutes

  3. And 8 cups of water as well as remaining seasonings including parsley, bay leaves, cayenne, and salt to the pot and bring to a boil

  4. Once water is boiling add lentils and continue to boil for about 5 minutes

  5. After 5 minutes cover and reduce to a simmer for 25-30 minutes

  6. Serve as is, with rice, or quinoa and top with extra fresh parsley for good measure!
