Vegan Creamy Cauliflower Soup

SERVES 4-6

Home sweet home from a week away in Florida and ready to get back to clean eating starting with this delicious creamy cauliflower soup made just from plants. Full of gut fueling fiber and veggies rich in phytochemicals and carotenoids, this detoxifying soup is the perfect way to get back on track.  

Phytochemicals and carotenoids protect our bodies from free radical damage and enhance our bodies natural detoxification mechanisms. Veggies from the brassica family like cauliflower and broccoli are especially rich in glucosinolates which play a powerful role in mitigating oxidative stress which you accumulate throughout the day and removing toxins from our body. 

Indulging on vacation is kind of a must but man does it feel good to get back to eating foods that make me feel my best!


Ingredients

1 head of chopped cauliflower (frozen works as well)

3-4 stalks of celery chopped

1/2 white onion diced

2-3 cloves of garlic

1/4 avocado

1.5 cups almond milk (or nut milk of choice)

Salt and pepper to taste

Extras

1-2 tbsp nutritional yeast

Micro greens

Drizzle of EVOO

Red pepper flakes

Directions

  1. Boil or steam 1 head of chopped cauliflower, 3-4 stalks of celery, and any other veggies you have on hand in a pot of water until tender (steaming actually preserves more of the nutrients but whatever is easiest

  2. Sauté 1/2 chopped white onion and 2-3 cloves of garlic in a pan until slightly caramelized

  3. Add all of the above ingredients plus 1/4 of an avocado, 1.5 cups of almond milk, and a pinch of salt to a blender and blend until smooth (about 3-5 minutes)

  4. Add blender contents back into a pot to heat throughout * for some extra cheesy goodness add 1-2 tbsp of nutritional yeast

  5. Top with micro greens, red pepper flakes, a drizzle of EVOO and you’re good to go!
