Fish Tacos

Serves 2 (2 tacos/person)

If there’s one food I crave each week, it’s tacos, and not just on Tuesdays! Maybe it’s because I thrive off of the flavors or maybe it’s because I live walking distance to one of my absolute favorite Mexican restaurants…regardless, tacos are a staple in my household and these fish tacos are everything of the sort. Full of flavor and fresh vibrant ingredients, these fish tacos will not disappoint, and bonus they literally take 10 minutes to make…does it get any better?!

When it comes to choosing your fish, I always suggest using what works best for you. My husband prefers a “meatier” fish so I like to make mine with seared tuna cooked medium rare…but you can’t go wrong here. And when it comes to choice of tortillas, I like Siete Foods Almond Flour Tortillas from Whole Foods (or you can buy them online). These Tortillas are grain free, gluten free, vegan, and paleo for those with specific dietary considerations, and are made from minimal thoughtfully sourced ingredients turning this already clean recipe into an even cleaner one (without skimping on flavor of course!). Use as is or heat these up in an oven at 300 degrees for about 5 minutes and dinner will be ready in no time!

Ingredients:

1 tuna steak (8 ounces)  

1 tablespoon white sesame seeds

1 tablespoon black sesame seeds

Sea salt and ground black pepper to taste

1 tablespoon extra virgin olive oil

½ cup chopped mango

¼ of an avocado chopped

2 tablespoons of thinly chopped red onion

Juice of ½ a lime

1 tablespoon of fresh cilantro + extra for garnishing

4 tortillas (Siete Foods Almond Flour Tortillas)

1 cup of black beans (from a can or previously cooked)  

Feta cheese

 

Directions:

Tuna Steaks

1. Season tuna on each side with sesame seeds, sea salt, and pepper.

2. In a medium sized pan, sear tuna in EVOO on medium-low heat for 1-2 minutes on each side for medium rare. If you prefer your tuna steak cooked throughout, cook for 3-4 minutes on each side (this may vary based on thickness). Remove from heat when done and let it rest for about 5 minutes. While the tuna is resting, you can get started on the mango salsa!

3. After 5 minutes or so slice tuna into strips and divide into 4 servings.

Mango Salsa

1. In a bowl add the chopped mango, chopped avocado, red onion, lime juice, cilantro and a pinch of sea salt. Briefly combine ingredients together to make sure the lime juice and sea salt are evenly mixed throughout and set aside.

Tacos

1. To build your tacos, place tortilla on a plate and add ¼ cup of black beans (previously heated) to the center of the tortilla. Next, add 1 serving of tuna steak (about 2-3 strips) and a scoop of mango salsa. Top with feta cheese and extra cilantro for garnish!
