Chickpea Chocolate Chip Cookies
If you’ve been following my Instagram page @wethewell then you know I’m obsessed with using chickpeas in my salads and snacks to incorporate plant-based protein into my diet and these guilt-free chickpea cookies are the perfect sweet treat to curb those sugar cravings. Free of refined carbs and refined sugars (excluding the dark chocolate chips) these clean ingredient plant-based cookies check the box in every way and seriously taste delicious (ps my husband is obsessed with these)!
INGREDIENTS:
1 (15) oz can of chickpeas (drained + rinsed)
1/2 cup raw creamy almond butter (creamy peanut butter also works)
1/4 cup raw maple syrup
3 tbsp tahini
1/2 tsp pure vanilla extract
1 1/4 tsp baking powder
Pinch of sea salt (plus extra for sprinkling on top before baking)
2/3 cup dark chocolate chips (vegan or regular work)
INSTRUCTIONS:
Using a blender, blend all ingredients excluding the dark chocolate chips on low-medium for 3-5 minutes (I like to make sure the chickpeas are super smooth and well combined)
Transfer mixture to a bowl and fold in the dark chocolate chips
Scoop one spoonful onto a greased baking sheet or sheet of parchment paper and pat down into the shape of a cookie...you should get 12 cookies out of this. PS this part is a little messy but perfect for those who like the batter!
Sprinkle with coarse sea salt and bake at 350 degrees for 8 minutes for a gooey center or 10-12 minutes if you like your cookies a littler crispier
After baking let the cookies cook for 5-10 minutes and enjoy!
